PREP: 25 minutes DEHYDRATE: 13 hours MAKES: 1½ cups
2 lb. fresh dark sweet cherries, pitted (tip, below)
1. Arrange cherries in a single layer on mesh-lined dehydrator trays.
2. Dehydrate at 135°F 13 to 15 hours or until dry and chewy, rotating trays halfway through. Let cool completely. (Dehydrating tips, page 468.)
3. Store in a covered container at room temperature up to 6 months.

1. Insert a clean paper clip into the stem end of the cherry. Twist it gently around the pit to loosen it.
2. Use the end of the paper clip to pull out the pit.
If you don’t own a cherry pitter, use a paper clip to remove the pit.
