This multipurpose gluten-free flour mix is a no-fail, cup-for-cup replacement for all-purpose flour.
3 cups white rice flour
3 cups potato starch
2 cups sorghum flour
4 tsp. xanthan gum
1. In a large airtight container whisk together all of the ingredients. Cover and store at room temperature up to 3 months.
Recipe Note: Avoid using this flour mix in yeast-leavened bread doughs.

Look for specialty flours and xanthan gum in the health food section of larger supermarkets or at natural food stores.
