Thick pumpkin and turnip soup blended with peanuts. Garnished with sour cream and roasted peanuts.

Ingredients:
1 tablespoon peanut oil
½ cup peanuts
1 small onion, chopped
1 teaspoon ginger, grated
3 cups fresh pumpkin, diced
1 small turnip, chopped
3 cups chicken stock
Sour cream for topping
Method:
1. Heat oil in a heavy bottom pot over medium heat. Sauté peanuts, onions and ginger for 3-4 minutes.
2. Add turnip and pumpkin to the pot. Cook for another 3-4 minutes.
3. Stir in chicken stock and bring to a boil. Cover with a lid and cook over low heat for 20 minutes or until turnip and pumpkin are soft.
4. Remove from heat and let it cool for 15 minutes.
5. Transfer to a blender and blend until even.
6. Heat again in the same pot and bring to a boil.
7. Pour soup into serving bowls. Top with sour cream and roasted peanuts.
8. Serve hot.
