Ingredients:
4 ounces almond butter, melted
1 cup +10 tablespoons artificial sweetener
1½ teaspoon strawberry extract
¼ teaspoon low sodium salt
1 cup artificial sweetener
½ cup strawberry juice
4 whole organic eggs
6 tablespoon butter, melted
Method:
1. In a large bowl combine almond butter with 10 tablespoons sweetener, strawberry extract and salt. Pour the mix into a silicone chocolate mold and chill for 1 hour or until firm, about an hour.
2. In heavy bottom pan, whisk eggs with strawberry juice, 1 cup sweetener and butter. Stir continuously over medium heat for 10 minutes or until thick. Strain in a bowl and put it into a bigger bowl with ice cubes. Stir intermittently till the mix is completely cool.
3. Take out the mold from refrigerator. Top the chilled almond butter truffle with thick strawberry mix. Return to the refrigerator and chill for an hour.
4. Serve cold.
