Cornmeal Apple Muffins

Preparation Time: 15 minutes

Cook Time: 25 minutes

Serves: 12 muffins

What's Needed?

¼ cup coconut oil, melted

½ cup apple cider

¾ cups applesauce

2 large eggs

¼ cup pure maple syrup

½ cup cornmeal, finely ground

1 ½ cups oat flour

½ tsp baking soda

½ tsp salt

1 cup apple, finely chopped

½ tsp cinnamon

¼ cup dried apple chips, chopped (if desired)

Directions

1. Heat up oven to 350ºF.

2. In a big bowl, combine eggs, maple syrup, apple cider, applesauce and melted coconut oil together.

3. Whisk to combine mixture.

4. Add Cinnamon, baking soda, salt, cornmeal and oat flour into the same mixing bowl and stir thoroughly until well incorporated.

5. Prepare a 12 cup muffin pan lined with silicone or greased.

6. Scoop 2 generous tbsps of batter into each silicone lined or greased muffin cup.

7. If you are using, top each muffin with a sprinkle of chopped dried apple chips.

8. Transfer the muffin cups into the prepared oven and bake until the tops become just browned for 25 minutes.

TIP: Check for doneness, insert a toothpick into the middle of a muffin and see if it comes out clean.

9. Take out of the oven and set aside to cool.

10. Transfer into a well covered meal prep container and refrigerate up to 4 days.

11. Otherwise, transfer cooled muffins onto a baking sheet and move into a freezer until completely frozen.

12. Then transfer frozen muffins into an airtight meal prep container or ziploc bag and refrigerate up to 1 month.
