Meal Plan Aragula Apple Salad With Maple Tahini Dressing

Serves: 4 servings

What's Needed?

4 small (cut into 1/2" pieces) red potatoes

1 large lemon, juiced

2 tbsps tahini

2 tbsps olive oil

1 1/2 tbsps pure maple syrup (+ additional, as necessary)

Sea salt (as necessary)

Chili powder, a pinch (if desired)

4 cups arugula, fresh

Black pepper, freshly ground (as necessary)

4 tbsps raw cashews

1 large diced green apple

2 tsp fresh lemon zest

1 tsp fresh basil, finely chopped

Directions

1. Add enough water and potatoes into a pot.

NOTE: Water should be just enough to cover potatoes.

2. Bring to boiling over med-high heat.

3. Cook for 15 minutes thereabout, until potatoes are softened.

4. Take off from heat and drain

5. Combine pepper, sea salt, chili powder, oil, maple syrup, lemon juice, and tahini in a small bowl.

6. In another bowl (a big sized one), combine basil, cashews, apples and aragula together.

7. Transfer cooked potatoes into the big bowl.

8. Stir to combine.

9. Dribble maple/tahini dressing over and swirl to coat.

10. Share into meal prep containers.

11. Add lemon zest over the top.

12. Cover and refrigerate up to 4 days.
