What's Needed?
4 cups water
2 tsps salt (+ additional, as necessary)
1 1/2 cups approx. (10 oz.) farro
1/2 chopped sweet onion
1 lb.(seeded & chopped) tomatoes
1/4 cup fresh Italian parsley leaves, finely chopped
1/4 cup fresh chives, snipped
2 tbsps balsamic vinegar
1 minced large clove garlic
1/4 cup olive oil
Black pepper, freshly ground
Directions
1. In a medium saucepan over high heat, combine farro, water, and salt together.
2. Bring to boiling, then lower to a simmer.
3. Cover, and simmer at med-low heat for 30 minutes approximately, until farro becomes soft.
4. Drain farro well and pour farro into a bowl and set aside.
5. Add parsley, chives, onion and tomatoes into the farro bowl.
6. Swirl to combine.
7. Whisk olive oil, pepper, salt, vinegar and garlic together and add to the farro bowl.
8. Toss to combine.
9. Refrigerate up to 1 day.
