Chickpea Shrimp (Pazili—Nohutlu Karides)

Ingredients
1 small onion, sliced
1–2 cloves garlic, sliced
¾ cup canned chickpeas, rinsed
Bunch of red Swiss chard, stemmed
5–6 tablespoons extra-virgin olive oil
¼ cup canned crushed tomatoes
1 tablespoon red pepper paste
10–12 raw tiger shrimp, peeled and deveined
¾ cup water
Salt and ground pepper to taste
Red pepper flakes to garnish
Directions
- Arrange the chard leaves on one another. Roll and cut julienne style.
- Heat the olive oil over medium heat in a deep saucepan or cooking pot.
- Add the onion; stir-cook for 3–4 minutes until soft and fragrant.
- Add the garlic and stir-cook until fragrant.
- Add the remaining ingredients except for the shrimp.
- Cover and cook until the veggies are softened and the juices are reduced.
- Add the shrimp and stir-cook for 2–3 minutes until they turn pink.
- Stop heating and season with some red pepper flakes. Serve warm.
