Chicken with Walnuts (Cerkez Tavugu)

Serves 2–4

Ingredients
1 cup walnuts, crushed
2 chicken breasts
3–4 cloves garlic, crushed
½ loaf of day-old Italian/French bread, crust removed
1 teaspoon red pepper or cayenne pepper
2 tablespoons sunflower oil
Salt and ground pepper to taste
Directions
  1. Add the chicken and enough water to cover it to a deep saucepan or cooking pot and cook for 20 minutes over medium heat.
  2. Remove the chicken and add the bread to the stock in the pot.
  3. Take out the bread and squeeze it. Place it in a mixing bowl.
  4. Cut the chicken into small pieces and add to the bowl. Mix in the garlic, salt, and pepper. Add the walnuts and mix again.
  5. Transfer the mixture to a serving plate.
  6. Heat the sunflower oil in a skillet or saucepan; add the red pepper and heat until it crackles.
  7. Top the chicken with it and serve.
