Turkish Spinach Borek

Ingredients
17 ounces yufka dough or phyllo dough
1 onion, diced
2 pounds fresh spinach, washed and drained
1½ teaspoons salt
1 teaspoon paprika
1 teaspoon ground black pepper
3 tablespoons sunflower oil
2 eggs
2 tablespoons plain yogurt
Dark sesame seeds for serving (optional)
Directions
  1. Combine the yogurt, oil, and eggs in a mixing bowl and whisk well.
  2. In a deep saucepan or cooking pot, add the onion, salt, spinach, paprika, and black pepper. Combine gently and heat over medium heat.
  3. Stir-cook until the spinach wilts and the water is reduced. Let cool.
  4. Place the dough sheet on a lightly floured surface.
  5. Brush some of the egg mixture over the dough.
  6. Place the spinach filling over the sheet, starting from the top edge all the way to the bottom.
  7. Roll the sheet to wrap up the filling and make a snake shape.
  8. Preheat the oven to 350°F.
  9. Coil the roll and arrange it in a round pan. Brush the remaining egg mixture over it and bake for about 20 minutes until it turns golden brown.
  10.       Remove from the oven and sprinkle a few drops of water on top. Place a damp towel over the pan and let cool for about 20 minutes.
  11.        Sprinkle with seeds if desired. Slice and serve.
