Turkish Spinach Borek

Ingredients
17 ounces yufka dough or phyllo dough
1 onion, diced
2 pounds fresh spinach, washed and drained
1½ teaspoons salt
1 teaspoon paprika
1 teaspoon ground black pepper
3 tablespoons sunflower oil
2 eggs
2 tablespoons plain yogurt
Dark sesame seeds for serving (optional)
Directions
- Combine the yogurt, oil, and eggs in a mixing bowl and whisk well.
- In a deep saucepan or cooking pot, add the onion, salt, spinach, paprika, and black pepper. Combine gently and heat over medium heat.
- Stir-cook until the spinach wilts and the water is reduced. Let cool.
- Place the dough sheet on a lightly floured surface.
- Brush some of the egg mixture over the dough.
- Place the spinach filling over the sheet, starting from the top edge all the way to the bottom.
- Roll the sheet to wrap up the filling and make a snake shape.
- Preheat the oven to 350°F.
- Coil the roll and arrange it in a round pan. Brush the remaining egg mixture over it and bake for about 20 minutes until it turns golden brown.

Remove from the oven and sprinkle a few drops of water on top. Place a damp towel over the pan and let cool for about 20 minutes.

Sprinkle with seeds if desired. Slice and serve.
