Chicken Orzo Soup

Ingredients
1 skinless boneless chicken breast, cubed
¼ cup hot water
1 small carrot, cubed
1 small zucchini, peeled and cubed
1 tablespoon butter, melted
2 tablespoons orzo pasta
1 teaspoon lemon juice
2 cups chicken stock, hot
Salt and ground pepper to taste
Yogurt Sauce
1 teaspoon flour
¼ cup plain yogurt
Directions
- Heat the butter over medium heat in a deep saucepan or cooking pot.
- Add the chicken cubes and stir-cook for 2–3 minutes.
- Add the hot water and cook until most of the water has evaporated.
- Add the stock, orzo, lemon juice, zucchini, carrot, ground pepper, and salt.
- Stir-cook until the pasta is cooked well.
- In a mixing bowl, combine the flour with the yogurt. Take a few teaspoons of liquid from the pasta mixture and add it to the bowl. Combine well.
- Add the yogurt mixture to the pasta; stir-cook for 10 minutes over low heat.
- Serve warm.
