Shrimp Casserole (Karides Güveç)

Ingredients
1 small onion, chopped
35 ounces fresh shrimp or prawns, cleaned, deveined, tail removed, and halved
3 small tomatoes, peeled, seeded and chopped
5 mushrooms, sliced
2–3 small green peppers, seeded and chopped
1 bay leaf
2–4 cloves garlic, sliced
Pinch dried thyme
½ cup fresh dill and parsley
Olive oil
Salt and ground pepper to taste
5 ounces cheese such as taze kasar, grated
Directions
  1. Heat the oil in a medium saucepan or skillet over medium heat.
  2. Add the onion and garlic; stir-cook until soft and fragrant.
  3. Add the green peppers, bay leaf, mushrooms, and thyme.
  4. Mix in the prawns/shrimp and tomatoes.
  5. Season well with the ground pepper and salt; stir-cook for 2 minutes.
  6. Add the chopped herbs, reserving some to garnish.
  7. Transfer the mixture to a baking dish and top with the grated cheese.
  8. Preheat the oven to 350°F.
  9. Bake for 15–20 minutes or until the cheese melts.
  10.        Serve topped with reserved herbs.
