Turkish Potato Salad (Patates Salatası)

Ingredients
Salad
2 pounds potatoes, peeled and cubed
1 red pepper, deseeded and finely chopped
1 bunch spring onions, trimmed and sliced
½ bunch parsley, finely chopped
Salt and pepper to taste
Dressing
2 tablespoons olive oil
2 teaspoons hot chili flakes
Juice of 1 lemon
2 teaspoons sumac (optional)
Directions
  1. Boil water in a deep saucepan or cooking pot; add the potatoes.
  2. Boil for 15 minutes until softened. Drain and set aside. Potatoes keep on cooking after you take them out of the pot, so do not over-boil or they will break.
  3. Combine the potatoes, parsley, peppers, and onion in a mixing bowl.
  4. Add the sumac and chili flakes; combine well.
  5. Add the oil and lemon juice and toss well.
  6. Serve fresh with optional meat or fish meze dish.
