Chicken Thighs with Green Beans and Tomatoes (Fasulye Tava - Adana)

Ingredients
17–18 ounces green beans, washed, trimmed and cut into bite-size pieces
4 chicken thighs
2 large tomatoes, peeled and sliced
1 cubanelle pepper, sliced
1 tablespoon red pepper paste mixed with ¼ cup water
2 tablespoons extra-virgin olive oil
7–8 cloves garlic, peeled
2 tablespoons butter, melted
Salt and ground pepper to taste
Directions
- Add the olive oil to a deep saucepan or cooking pot.
- Add the beans and chicken thighs; place the tomato slices on top and then add the garlic on top of the tomato.
- Add the remaining ingredients; cook the mixture over high heat for about 1 minute.
- Turn heat to low and cook for 90 more minutes until the chicken is cooked well, stirring occasionally.
- Serve with Turkish bread or pilaf on the side.
