(Seafood Ramen)

Haemul ramyeon is a creative innovation from regular ramen. It is made of instant noodles with fresh seafood like clams, abalone, octopus, or crab. This dish is similar to jjamppong (spicy seafood noodles) in some ways. In Korea’s coastal areas, fishermen often cook this dish on their fishing boats after rounding up their catch for the day.

HOW TO Prepare

  1. Prepare your favorite seafood like shrimps, squid, mussels, crab, clams, etc.
  2. Slice green onion thinly.

HOW TO COOK

  1. In a pot, put oil, green onion, garlic, and chili powder and stir-fry them over low heat until you can smell their aroma.
  2. Add in water and kelp and boil over medium heat.
  3. When water starts to boil, remove kelp and add the ramen seasoning.
  4. Add noodles and boil for 2 minutes.
  5. Add seafood and boil for another 2 to 3 minutes.
  6. Put in green onion and turn heat off.

chef’s notes

  1. Cook your ramen with any of your favorite seafood. You don’t have to use all of the seafood listed in this recipe. You can also use a combination of a few or just a pair of seafood.
  2. The cooking time depends on the amount of seafood used. You can put noodles into the pot first before the seafood but if you are using more seafood, it’s better to put them first before adding the noodles.

VARIATION

Black Seafood Ramen or Ramen with Squid Ink:

  1. When water starts to boil, add 1 tablespoon squid ink and simmer.
  2. Add noodles and half the quantity of seafood.
  3. In a pan, roast the other half of the crab with a little oil. When the crab has turned a dark red orange, and cooked, set aside. Use the same pan to sauté the remaining seafood.
  4. Put ramen in bowls and garnish with crab, seafood, spring onions, and a drizzle of sesame oil.
