(Egg Roll)

Dalgyal Mali is similar to a rolled omelet but it is usually cooked with finely chopped vegetables. Other ingredients may also be added depending on one’s preference. Aside from being a side dish called banchan in Korea, this dish has become a popular street food as well. It may be included in packed lunches together with kimbap. When Jun Pyo loses his memory in Boys Over Flowers,12 Jan Di prepares a lunch box with some rice designed with his face and dalgyal mali to help him remember her.

INGREDIENTs

HOW TO PREPARE

  1. Finely chop small green onions.
  2. In a medium bowl, beat eggs with a pair of chopsticks or fork.
  3. Mix all the ingredients in the bowl including the seasonings. Check the taste.

HOW TO Cook

  1. Heat a square non-stick pan. Brush it with oil, then lower the heat.
  2. Pour half of the egg mixture into the pan and spread evenly.
  3. When the egg is half-cooked, start rolling it like a jelly roll from the far end of the pan until you reach the other end. You can use a spatula or a pair of chopsticks for this.
  4. Push the rolled-up egg to the far end of the pan. Pour the remaining egg mixture into the pan and repeat the process. Lift the rolled-up egg a little so that some of the raw eggs would go underneath it and the two rolls would stick together. Keep the heat low so the egg rolls won’t turn brown or burn.
  5. Transfer the egg rolls to a plate and let them cool.
  6. Cut the egg rolls into bite-sized pieces and put them on a serving plate.

CHEF’S NOTES

  1. You can use Spam or any ham for this recipe. You can also use veggies instead.
  2. You can get a bigger egg roll if you use more eggs. This time, divide and roll the egg mixture for more than three times to get a better result; don’t roll just once.
  3. If you have a bamboo mat for Kimbap, use it to roll the egg while in a hot state. Roll tightly to form a rectangular or oval tube and to make a harder and better-shaped egg roll.
