THINGS TO REMEMBER

  1. Use pots with thin bottoms to reduce cooking time. Thin pan bottoms help boil water quickly. This way, the noodles won’t swell and their chewiness is kept for a long time.
  2. Put seasonings in the water first before the noodles. Adding seasoning powder first increases the salinity of the water. This helps the noodles get cooked quickly. Also, this trick allows the noodles to absorb the taste of the seasonings better.
  3. Reduce water when boiling two ramen servings. Keep in mind that the volume of water is not proportional to the number of the ramen packs you’ll cook.
  4. After putting the noodles in, close the lid for a while. When you close the lid, the cold air outside the pot is shut off and the water temperature inside rises faster along with the pressure inside the pot. Boil your noodles with the lid on until it is fully cooked.
  5. After cooking, let the noodles meet some cold air for good texture. Lift the noodles up with a pair of chopsticks or tongs to decrease its temperature and to make the surface shrink. This is to prevent the noodles from easily expanding and to give them a chewy texture.

RAMEN SNACK

  1. To make this special snack, crush ramen into large pieces, then stir-fry over low heat in a lightly oiled pan. Add honey or syrup, then stir-fry until sticky. Cool it down.
  2. Cinnamon powder or cocoa powder can add flavor to this snack.
  3. If you want to make a ramen nuts bar, add chopped almonds, walnuts, or any kind of nut.
