(Marinated and Grilled Beef Rib Fingers)

Galbi gui is made with beef rib fingers. The beef is marinated with seasonings for a while before grilling for a richer taste. The seasonings must be as simple as possible—just enough to enhance and not overpower the taste of the meat. It can be grilled over charcoal or directly on a table in an in-house barbeque. Like the popular samgyeopsal, it may be eaten as is or in a wrap using lettuce, together with other sauces and side dishes.

HOW TO prepare and COOK

  1. Remove fats from the beef.
  2. Score beef diagonally with 1 centimeter intervals, then score in another direction to make diamond shapes.
  3. Mix all seasonings in a bowl.
  4. Marinate beef with the seasonings.
  5. Keep in refrigerator or freezer for a few hours or overnight.
  6. Cook in a pan or grill over charcoal.

VARIATION

Marinade:

1/4 cup pounded Ilocos garlic

2 teaspoons salt

1 teaspoon coarsely ground pepper

2 teaspoons sugar

2 tablespoons oil

Marinate beef for at least 3 hours or overnight.

Basting Sauce:

2 tablespoons Korean corn syrup

2 tablespoons calamansi juice

2 tablespoons Korean soy sauce

2 teaspoons Korean fish sauce

1/3 cup beef stock (boil 1/3 cup water with 1/2 beef cube)

  1. Combine sauce ingredients and mix well.
  2. This mixture goes very well with rib meat and is perfect for grilling. Brush meat with this sauce while grilling.
  3. You can also serve it with your favorite achara combined with kimchi. For every 1/2 cup achara, add 2 to 3 tablespoons chopped kimchi. Make sure kimchi is drained before adding to achara.

*I serve this with smoked sea salt for a smokey finish.
