Aunt Marcie’s Fried Rice

Makes 8 to 10 servings

1/2 lb. bacon, crisply cooked and crumbled, 5 T. drippings reserved

6 eggs, beaten

1/4 t. salt

3 c. cooked rice, chilled

3/4 c. frozen peas, thawed

1 T. soy sauce

2 T. green onion, sliced

In a large skillet, heat 3 tablespoons reserved drippings until very hot. Beat eggs and salt together with a fork; pour egg mixture into skillet. Cook, stirring quickly and constantly with a spoon until eggs are the size of peas. Reduce heat to low; push eggs to one side of skillet. In same skillet, gently stir rice and remaining drippings until rice is well coated. Add bacon, peas and soy sauce. Gently stir to mix; heat through. Spoon into a serving bowl and sprinkle with green onion.
