Serves 6
1-1/2 lbs. ground beef
2 10-3/4 oz. cans tomato soup
1/4 c. green pepper, chopped
Optional: 1/4 c. onion, chopped
1-1/2 c. instant rice, cooked
Brown ground beef in a large skillet over medium heat; drain. Add tomato soup, green pepper and onion, if using; mix well. Add rice, stirring gently. Simmer for 15 minutes.
If a recipe calls for canned tomatoes, take advantage of Mexican or Italian-style. They already have the seasonings added, so there are fewer ingredients for you to buy and measure!
