Serves 4 to 6
2 T. oil
16-oz. pkg. frozen mixed vegetables, thawed
1 yellow squash, diced
1 zucchini, diced
8-oz. pkg. bowtie pasta, cooked
1/4 t. garlic, minced
1/2 t. salt
1/2 c. shredded mozzarella cheese
1/2 c. shredded provolone cheese
1/2 c. shredded Parmesan cheese
Heat oil in a large saucepan over medium heat; sauté vegetables together until lightly golden and tender. Stir in cooked pasta, garlic and salt. Sprinkle with cheeses and stir until melted.
