Beefy Rice Bake

Serves 6

1 lb. ground beef

1 c. instant rice, cooked

14-1/2 oz. can diced tomatoes

4-oz. can sliced mushrooms, drained

10-3/4 oz. can cream of mushroom soup

1 T. Cajun seasoning

8-oz. pkg. shredded sharp Cheddar cheese

Brown ground beef in a large skillet over medium heat; drain. Add rice, tomatoes, mushrooms, soup and seasoning; mix well. Cook for 5 minutes, or until heated through. Spread mixture in a lightly greased 13"x9" baking pan. Sprinkle with cheese. Bake, uncovered, at 350 degrees for 10 minutes, or until cheese is melted.

Cook a double batch of rice, then freeze half in a plastic freezer bag for another meal. When you’re ready to use the frozen rice, just microwave on high for one minute per cup to thaw, 2 to 3 minutes per cup to warm it through. Fluff with a fork...ready to use!
