Serves 4 to 6
2 T. olive oil
2 boneless, skinless chicken breasts, cubed
1/2 lb. spicy ground pork sausage
1 red onion, thinly sliced
2 cloves garlic, minced
1 red pepper, sliced
14-1/2 oz. can diced tomatoes
3 T. brown sugar, packed
1/2 t. dried oregano
1 t. dried basil
1/8 t. salt
1/8 t. pepper
16-oz. pkg. linguine pasta, cooked
Heat oil in a large skillet over medium heat. Add chicken, sausage, onion, garlic and pepper; cook until chicken and sausage are cooked through. Drain. Add remaining ingredients except pasta; simmer for 5 minutes. Add cooked pasta to skillet; simmer for an additional 5 minutes.
