Serves 4 to 6
1 lb. ground beef
1 onion, chopped
2 stalks celery, chopped
salt and pepper to taste
1/2 c. long-cooking brown rice, uncooked
1/2 c. long-cooking white rice, uncooked
10-3/4 oz. can cream of chicken soup
6 T. soy sauce
2-1/2 c. water
Garnish: chow mein noodles
Brown ground beef, onion and celery in a large skillet over medium heat; drain. Add salt and pepper to taste. Stir in remaining ingredients except noodles; bring to a boil. Reduce heat; cover and simmer for 20 minutes, or until liquid is absorbed. Top servings with noodles.
