Makes 4 to 6 servings
8-oz. pkg. beef-flavored rice vermicelli mix, uncooked and divided
1 lb. ground beef
1 egg, beaten
2-1/2 c. water
cooked egg noodles
Combine rice vermicelli mix with ground beef and egg, setting aside seasoning packet from mix. Shape into small meatballs; brown on all sides in a skillet over medium heat. Drain. Combine contents of seasoning packet with water; pour over meatballs. Cover and simmer over low heat for 30 minutes. Serve meatballs and sauce over cooked egg noodles.
