Makes 6 servings
1 lb. ground beef
2 onions, chopped
1 c. celery, chopped
1/4 c. soy sauce
10-3/4 oz. can cream of mushroom soup
10-3/4 oz. can cream of chicken soup
1-1/2 c. warm water
1/2 c. long-cooking rice, uncooked
3-oz. can chow mein noodles
Brown ground beef in a large skillet over medium heat; drain. Stir in onions, celery, soy sauce, soups, water and rice. Transfer to a lightly greased 13"x9" baking pan. Bake, covered, at 350 degrees for 45 minutes. Sprinkle chow mein noodles over top. Return to oven, uncovered, for 15 minutes.
Casseroles that feed a crowd are great take-alongs for any potluck or carry-in. Keep them warm by wrapping the dish in aluminum foil and then tucking it into a newspaper-lined basket.
