Serves 8 to 10
2 lbs. ground beef, browned and drained
8 c. water
28-oz. can diced tomatoes
28-oz. can tomato sauce
2 c. cooked rice
2 c. green peppers, chopped
2 cubes beef bouillon
1/4 c. brown sugar, packed
2 t. salt
1 t. pepper
Mix together all ingredients in a stockpot; bring to a boil over medium-high heat. Reduce heat and simmer for 30 to 40 minutes, or until green peppers are tender.
Save the water that vegetables have been cooked in...it makes a flavorful and nutritious addition to your next pot of soup.
