Makes 8 to 10 servings
4 to 5 tomatoes, coarsely chopped
1 lb. Cheddar cheese, diced
1/2 to 3/4 c. olive oil
1/2 t. salt
2 to 4 T. dried basil
4 to 5 cloves garlic, minced
16-oz. pkg. linguine pasta, cooked
In a large serving bowl, combine all ingredients except pasta, adding basil and garlic to taste. Let stand at room temperature for 30 minutes to 1-1/2 hours. At serving time, add hot cooked pasta and toss well. Serve immediately.
Add some fresh broccoli, asparagus or snow peas to a favorite pasta recipe...simply drop veggies into the pasta pot halfway through the cooking time. Pasta and veggies will be tender at about the same time.
