Picnic Spaghetti Salad

Serves 6 to 8

8-oz. pkg. spaghetti, uncooked and coarsely broken

16-oz. pkg. coleslaw mix

1 onion, chopped

1 green pepper, chopped

1 c. mayonnaise

15-oz. jar coleslaw dressing

Cook spaghetti according to package directions; drain and rinse with cold water. Place in a large serving bowl; add remaining ingredients. Mix well; refrigerate until chilled.

For hearty salads in a snap, keep cans and jars of diced tomatoes, black olives and marinated artichokes in the fridge. They’ll be chilled and ready to toss with fresh greens and cooked rice or pasta at a moment’s notice.
