Serves 6
3 c. cooked rice
8-oz. pkg. shredded Monterey Jack cheese
1 c. sour cream
7-oz. can diced green chiles
1/4 c. butter, melted
1/2 t. salt
1/2 c. shredded Cheddar cheese
Optional: paprika
Combine all ingredients except Cheddar cheese and paprika in a greased shallow 2-quart casserole. Top with Cheddar cheese; sprinkle with paprika, if desired. Bake, uncovered, at 350 degrees for 30 minutes, or until heated through and bubbly around the edges.
