Description
The lotus is an aquatic plant with thick, fleshy roots that grow in the mud. Lotus has two species, one with yellow flowers and the other has pink flowers. The leaves are very large and may float on the water or rise above the surface. The fruits are in the form of flat conical pods with up to 20 hard seeds.
Where To Find
The yellow-flowered species is found in North America. The pink-flowered lotus is common in Asia and other parts of the world. You can find them in calm waters of ponds, shallow lakes, and stagnant areas of rivers.
What And How To Eat
The young leaves, flowers, seeds, and roots can be eaten raw or cooked. Boil and eat young leaves as a vegetable. The starchy root can be boiled or baked.
Medicinal Use
The dried or fresh fruit is pounded and made into a poultice for treating inflammatory conditions.
