Description

Sassafras is easily identifiable as a shrub or small tree that has three types of leaves on the same tree. Some of the leaves will have no lobe while others will have one or two lobes. It produces small, yellow flowers in early spring and dark blue fruits. The original root beer flavor is from sassafras roots.

Where To Find

Sassafras is found throughout eastern North America. It grows in open, sunny areas like forest edges and roadsides

What And How To Eat

The edible parts are the young twigs, leaves and roots. Twigs and leaves can be eaten fresh or dried in soups. Peel the root, dry it then boil it to make drinks.

Medicinal Use

Sassafras is valued because of its tonic properties. Tea made from the root back is used for ailments such as colds, rheumatism, acne and stomach trouble. Poultice made from the pith of the stems is used as eyewash and internally for colds. Sassafras essential oil is used externally to treat insect bites and lice.
