Plantain Salad

Ingredients:

2 cups of plantain leaves, chopped finely

1/2 cup of cabbage, chopped finely

1 celery stalk, chopped finely

1 onion, chopped

2 garlic gloves, chopped finely

1 (28-ounce) can of chick peas, drained

1 teaspoon salt

1/8 cup wine vinegar

1/8 cup olive oil

Directions:

1. In a large bowl, combine plantain leaves, cabbage, celery, onion, garlic, peas and salt. Mix well and place in the fridge to chill.

2. After about 2 hours, add the vinegar and olive oil.
