Breakfast Rolls

These small rolls are flavored with butter and rolled oats. They can be served at any meal, but they are especially welcome at breakfast. One pound of packaged bread or pizza dough makes about twelve rolls, depending on how large you make them.

Cut the dough lengthwise in half, then cut each half crosswise into 6 equal pieces to form a total of 12 pieces. Melt the butter and pour it onto a plate. Spread the oats on another plate. Shape each piece of dough into a ball (they don’t have to be perfectly round), roll them first in the butter and then in the oats, and arrange them on a cookie sheet lined with nonstick aluminum foil. Let the dough rise at room temperature for 45 minutes.

Preheat the oven to 425 degrees. Bake the rolls for 25 minutes, until brown and crispy. Serve warm.

Note: These rolls freeze well: Let them cool completely on a wire rack, then wrap them individually in plastic wrap and pack in a plastic freezer bag. At serving time, moisten the frozen rolls lightly with water and place them in a 400-degree oven to recrisp for about 10 minutes.
