Puree of Peas with Mint

This delicious puree is made with fresh mint and frozen petite peas—the smallest, sweetest peas. Make sure that after you drain them, the hot peas go directly into the blender. If left longer before pureeing, their skins will shrivel and toughen, and consequently the puree will not be smooth. A blender does a better job than a food processor for this recipe.

Bring 3 cups water to a boil in a large saucepan. Add the peas, return the water to a boil, and cook for 2 minutes.

Drain the peas in a colander and immediately place them in a blender. Blend for about 20 seconds. Using a rubber spatula, push any peas clinging to the sides down to the bottom. Add the mint and blend for another 20 seconds. Add the remaining ingredients and process for 10 to 15 seconds. The mixture should be smooth and bright green. Serve.

This makes a great garnish for poultry, fish, or roast veal.
