Broiled Ham Steaks

I often buy ham shoulders, precooked boneless hams that are available at the supermarket. The meat is good in sandwiches or cooked with peas or lentils (see Black-Eyed Peas and Ham and Fricasse of Peas with Ham), and it can also be sliced into steaks. These cook in a few minutes under the broiler and are quite flavorful. They are especially good served with Steamed Cauliflower with Lemon Butter or Zucchini Flan, along with potatoes.

Preheat the broiler. Arrange the ham steaks on a cookie sheet lined with nonstick aluminum foil. Mix together the ketchup, brown sugar, Tabasco sauce, and mustard in a small bowl and spread evenly over the steaks.

Broil the steaks, about 5 inches from the heat source, for about 10 minutes, until nicely browned. Serve.

These flavorful ham steaks cook in a few minutes under the broiler.
