Citrus Celeriac Salad with Lemon Cumin Dressing

You may have had a celery salad before, but you most likely haven’t had celeriac, also known as celery root. This variety of celery can be spiralized and used as a great neutral base for salads. If the thick noodles are too intense for you, you can make them a little more mild by using the small-noodle blade and breaking the noodles into pieces. This will help the vegetable mix in more with the other ingredients, although the citrus dressing will help add to the celeriac noodles’ flavor and distract from its distinct texture.

Serves 2 or 3

1 celeriac root

1 medium grapefruit

1 blood orange

2 tablespoons halved hazelnuts

1 tablespoon finely chopped fennel bulb

Ingredients for Lemon Cumin Dressing

2 tablespoons extra-virgin olive oil

1 tablespoon white wine vinegar

1 tablespoon lemon juice

12 teaspoon cumin

  1. Cut off outside skin of celeriac root and peel entire outside until smooth. Slice off top and bottom of celeriac and spiralize using a large-noodle blade. Place into a bowl.
  2. Cut grapefruit and orange into slices. Use a knife and scoop slices out of peel, removing the whites. Slice grapefruit and orange into cubes. Add to bowl with celeriac, along with hazelnuts and fennel.
  3. To make dressing, mix oil, vinegar, lemon juice, and cumin in a bowl until smooth. Drizzle over salad and enjoy immediately or serve chilled.

Prevent Celeriac from Browning

If you want your celeriac salad to have a pretty appearance, prepare celeriac in a timely manner once exposing the vegetable to the air. It can brown quickly, so drop the noodles into a bowl of lemon water if you need to buy yourself some time.
