Zucchini Caprese with Burrata

Unlike many other types of salad, caprese is a traditional Italian salad that isn’t chopped and tossed together with dressing but is instead sliced and stacked. This variation of the salad includes zucchini, which provides an additional base to the standard ingredients of tomatoes, cheese, and basil. Burrata cheese differs from other types of mozzarella such as buffalo mozzarella because it is filled with a creamy mixture, making it an extremely rich and decadent choice for the salad that pairs well with the lushness of the thick-ribboned zucchini noodles.

Serves 2–4

1 large zucchini

7 medium vine-ripened tomatoes

16 ounces burrata cheese

12 tablespoon extra-virgin olive oil

12 tablespoon balsamic vinegar

12 teaspoon oregano

12 teaspoon pepper

  1. Cut zucchini in half crosswise and slice off both ends. Spiralize using a straight-noodle blade so zucchini comes out in ribbons. Evenly spread zucchini on a plate or platter and press flat.
  2. Slice tomatoes in half and place on top of zucchini, making sure the cut side of the tomato is facing up so the burrata can sit above it.
  3. Slice burrata into pieces just a little smaller than tomatoes and top each tomato with a piece. Drizzle with olive oil and vinegar and top with oregano and pepper.
