Avocado Zucchini Noodles

People love making pasta because it can be a super quick way to put together a meal. Just throw some sauce over some noodles, and voilà! When it comes to spiralized noodles, you can create the same types of dishes with just as much ease. In fact, some dishes you don’t even need to heat. These zucchini noodles are raw and coated in a creamy avocado sauce, one you can whip up in just minutes. I promise you’ll feel less guilty indulging in these noodles than you would going for your regular spaghetti with cream sauce.

Serves 2

2 medium zucchini

1 avocado

Juice of 1 lemon

10 cherry tomatoes, halved

  1. Peel both zucchini. Slice them in half crosswise and cut off both ends. Spiralize using a small-noodle blade.
  2. Combine avocado and lemon juice in a small bowl and whisk until smooth. Toss noodles in avocado sauce and top with cherry tomatoes.
