White Sweet Potato Noodles with Prosciutto, Brussels Sprouts, and Dates

White sweet potatoes are the often neglected middle child of the potato family. Though we are used to using orange sweet potatoes in most dishes, white sweet potatoes are another fantastic option, especially when it comes to spiralizing. They are less sweet and more mild, making them a great option for replacing pasta in savory dishes. The Hannah sweet potato is one option for a white sweet potato, and its slightly sweet flavor plays well with both the savoriness of the prosciutto and sweetness of the chopped dates.

Serves 2

1 large white sweet potato

212 tablespoons extra-virgin olive oil, divided

4 cloves garlic

3 tablespoons chopped shallots

2 cups shaved Brussels sprouts

14 cup dates

6 ounces nitrite-free prosciutto

  1. Peel sweet potato, cut in half crosswise, and slice off both ends. Spiralize using a small-noodle blade.
  2. In a large pan, heat 112 tablespoons olive oil on medium heat. Add noodles, cover, and cook for about 10 minutes or until noodles are slightly soft. Stir every 2–3 minutes to prevent bottom noodles from burning.
  3. While noodles are cooking, chop garlic. In a separate medium-sized pan, heat 1 tablespoon olive oil on medium-low. Add garlic and shallots and cook for 1–2 minutes. Then turn heat to medium and add Brussels sprouts; cook for about 5 minutes until they are soft. Remove from heat.
  4. Remove pits from dates and chop dates into bite-sized pieces. Add to Brussels sprouts pan and mix evenly. Transfer Brussels sprouts mixture to the pan with sweet potato noodles and toss until sweet potato is evenly coated. Break prosciutto into small pieces, and add to noodles. Season with salt and pepper if desired.

Can’t Find White Sweet Potato?

If white sweet potatoes aren’t accessible to you, you can use butternut squash noodles or golden beet noodles in this recipe instead. Regular potatoes may be too bland, and orange sweet potatoes may make the dish too sweet.
