Mahi Mahi over Zucchini Noodles with Mango Salsa

Named by the Hawaiians, mahi mahi is a tropical fish with a delicate and mild flavor. It is enjoyed often in tropical climates, so it’s only fitting it be topped with something like a mango salsa. When buying mahi mahi, look for a variety caught in the Atlantic off the coast of the United States, which is the best for the environment.

Serves 1 or 2

1 medium mahi mahi fillet

2 medium zucchini

1 tablespoon coconut oil

Ingredients for Mango Salsa

1 cup chopped mango

13 cup chopped red onion

1 cup chopped tomatoes

14 jalapeño, chopped

Juice of 2 limes

Dash of salt

  1. Broil mahi mahi for 6 minutes on each side.
  2. While fish is cooking, cut zucchini in half crosswise and slice off both ends. Spiralize using a small-noodle blade. In a large pan, heat coconut oil on medium heat. Add zucchini and cook for about 5 minutes or until noodles are soft.
  3. To make salsa, combine chopped mango, red onion, tomatoes, and jalapeño. Toss with lime juice and a dash of salt.
  4. Place noodles on a plate and top with fish and salsa. Serve warm or chilled.
