Garlic Parsley Curly Fries with Sriracha Yogurt Dipping Sauce

One of the best aspects of the spiralizer is that it can turn otherwise unhealthy meals into lighter and healthier versions. These French fries are a perfect example of how you can make a typical fast food without the deep-frying or excess sodium. These curly potatoes are baked to crispy perfection, and you can enjoy them with an easy two-step, low-fat dipping sauce—just be prepared to handle the heat!

Serves 2

2 large russet potatoes

3 tablespoons extra-virgin olive oil or vegetable oil

4 cloves garlic, finely chopped

14 cup finely chopped parsley

12 cup Greek yogurt

1 tablespoon sriracha

  1. Preheat oven to 450°F. Cut potatoes in half crosswise and slice off both ends. Spiralize using a large-noodle blade and put noodles into a large bowl.
  2. Add olive oil, garlic, and parsley to potato bowl and toss until evenly coated. Place on a baking sheet lined with aluminum foil and bake for 15–20 minutes or until fries are crispy.
  3. To make dipping sauce, just combine Greek yogurt and sriracha in a small bowl and mix until blended.
