Apple Coleslaw

This healthy version of coleslaw uses spiralized cabbage as well as spiralized apple. It’s tossed in a dairy-free honey mustard dressing, making it a healthier option with a sweet and tangy kick. It can be served as a side salad, on a sandwich or burger, or with chicken. You can refrigerate the slaw before serving, which will allow the flavors to marinate, though it’s not necessary. If you don’t have Dijon mustard, you can also use regular yellow mustard, although the dressing will be more mild and a little more sweet.

Serves 4

1 head green cabbage

2 apples

3 tablespoons chopped chives

2 tablespoons chopped cilantro

4 tablespoons Dijon mustard

4 tablespoons wild raw honey

2 tablespoons extra-virgin olive oil

2 tablespoons white wine vinegar

14 teaspoon pepper

14 teaspoon salt

  1. Cut off the end of the cabbage and peel off outer layer. Spiralize using a straight-noodle blade and put spiralized cabbage into a large bowl.
  2. Spiralize apples using a small-noodle blade and add to the bowl with cabbage. Add chopped chives and cilantro and toss.
  3. To make dressing, mix together mustard, honey, olive oil, and vinegar in a small bowl until everything is combined evenly. Pour over cabbage bowl and toss until salad is coated evenly. Top with salt and pepper. Serve immediately or refrigerate to chill.
