Cajun-Spiced Jicama Shoestring Fries

When you think jicama, it’s not typical to think of something hot like fries. But when you spiralize one of these, you get a completely different flavor than when served chilled. In fact, jicama is a great substitute for potato when it comes to French fries, and these root vegetables really soak up the Cajun spices, making them a flavorful and healthy alternative to indulgent comfort food.

Serves 4

2 large jicamas

1 tablespoon extra-virgin olive oil

2 teaspoons cayenne pepper

2 teaspoons oregano

2 teaspoons thyme

2 teaspoons paprika

1 teaspoon red chili flakes

  1. Preheat oven to 400°F. Peel jicamas, slice in half, and cut off both ends. Spiralize using a small-noodle blade and place into a large bowl. Add olive oil and all remaining ingredients and toss until noodles are evenly coated.
  2. Place jicama on an aluminum-foil-lined baking sheet, spreading evenly. Bake for 15 minutes, then flip fries using a spatula. Bake for another 10 minutes. Let cool for about 5–10 minutes and serve warm.

Use More Than You Think

These jicama fries shrink down a lot more than you would think, so if you’re serving a larger group, opt for more jicama. These make a great side dish, but if you’re making it the main focus, spiralize away!
