1 mango, finely chopped
1 tablespoon fresh lime juice
11/2 tablespoons orange juice
1/4 small onion, finely chopped
6 drops hot-pepper sauce
11/4 teaspoons salt, divided
2 teaspoons chopped fresh cilantro
4 boneless, skinless chicken breast halves
1 tablespoon vegetable oil
1/4 teaspoon ground black pepper
1. In a medium bowl, combine the mango, lime juice, orange juice, onion, hot-pepper sauce, and 3/4 teaspoon salt. Stir in the cilantro.
2. Coat a grill rack with cooking spray. Preheat the grill. Rub the chicken with the oil and season with the black pepper and the remaining 1/2 teaspoon salt. Grill the chicken, turning once, for 10 minutes, or until a thermometer inserted in the thickest portion registers 165°F and the juices run clear.
3. Serve the chicken topped with the salsa.
