Nachos with Chicken and Black Beans

6 ounces tortilla chips (preferably round chips)

1 can (16 ounces) black beans, rinsed and drained

11/2 cups shredded Monterey Jack cheese

1 cup cubed cooked chicken breast

1/2 red onion, diced

Juice of 2 limes

1/2 cup light sour cream

1 tablespoon chopped fresh cilantro

6 tablespoons salsa

Pickled jalapeño slices (optional)

1. Preheat the oven to 425°F.

2. Arrange the chips in a single layer on a large baking sheet. Spoon the beans evenly over the chips, then top with the cheese, chicken, and onion. Bake for 15 to 20 minutes, or until the cheese is fully melted and bubbling.

3. Meanwhile, in a small bowl, combine the lime juice, sour cream, and cilantro.

4. Spoon the sour cream mixture over the hot nachos. Top with the salsa and jalapeños (if using).
