1 tablespoon Italian seasoned dried bread crumbs
1 teaspoon grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon pepper
1 boneless, skinless chicken breast, pounded 1/4" thick
1 tablespoon olive oil
1 small clove garlic, crushed
1/4 cup marinara sauce
3 handfuls baby spinach
1. In a shallow dish, combine the bread crumbs, cheese, salt, and pepper. Press the chicken breasts into the crumbs to stick.
2. Heat the oil in a nonstick skillet over medium heat, and cook the chicken and garlic for 10 minutes, turning once. Top with the marinara sauce. Stir in the spinach. Cook for 2 minutes, or until the spinach wilts and a thermometer inserted in the thickest portion of each chicken breast registers 165°F and the juices run clear.
