One day when we were light on groceries, I came up with this recipe. It’s been a favorite ever since, especially when we need a quick dinner.

2 teaspoons canola oil
1 pound beef top sirloin steak, cut into thin strips
1/8 teaspoon salt
Dash pepper
3 plain bagels, split
1/3 cup cream cheese, softened
6 thick slices tomato
6 slices part-skim mozzarella cheese
1. Preheat broiler. In a large skillet, heat oil over medium heat. Add the beef; cook and stir for 3-5 minutes or until browned; drain. Stir in salt and pepper.
2. Spread the cut sides of the bagels with cream cheese. Transfer to an ungreased baking sheet; spoon the beef over the bagels. Top with tomato and mozzarella cheese. Broil 4-6 in. from heat 3-5 minutes or until the cheese is melted and lightly browned.
