Ingredients (6 servings)
1 lb. boneless chicken thigh
½ cup milk
¼ teaspoon salt
1 pinch black pepper
½ teaspoon garlic, minced
½ teaspoon ginger, minced
1 tablespoon rice wine
⅓ cup potato starch
Cooking oil for deep frying
Sauce
1 tablespoon soy sauce
3 tablespoons rice wine or mirin
2 tablespoons apple cider vinegar
1 tablespoon Korean red chili pepper paste
3 tablespoons honey
2 teaspoons sesame oil
2 tablespoons brown sugar
1 teaspoon garlic, minced
1 teaspoon ginger, grated
1 pinch black pepper
Garnish
2 tablespoons peanuts, chopped
Preparation
Soak the chicken in milk in a suitable bowl, and then cover to refrigerate for 2 hours. Drain and transfer the chicken to a suitable bowl. Stir in the rice wine, black pepper, ginger, garlic, and salt. Mix well and leave it for 30 minutes. Mix the sauce ingredients in a saucepan, and then cook for 4 minutes until it thickens. Coat the chicken with potato starch and deep fry in a cooking pan with hot oil at 350 degrees F until golden brown. Transfer the chicken to the sauce and mix well. Finally, serve warm.
