Small and rich, these decadent chocolate and zesty lime desserts make a rich yet surprisingly refreshing end to a meal.

1 cup heavy cream
1½ tablespoons rice malt syrup
1 ounce bittersweet chocolate, broken into pieces
finely grated zest of 1 lime, plus 1½ tablespoons juice
1 teaspoon unsweetened cocoa powder
1 Put the cream in a saucepan and slowly bring to a boil over medium heat. Add the rice malt syrup and stir well, then boil for 3 minutes. Stir in the chocolate, most of the lime zest, and all the lime juice until the chocolate has melted.
2 Pour the mixture into four espresso cups. Cover with plastic wrap and chill in the refrigerator for at least 4 hours.
3 Decorate the desserts with the cocoa powder and remaining lime zest and serve.

If you would prefer these desserts a little less rich, then leave out the chocolate.
